Day 12: Turkey and tomato panini.
The lack of color in this photo bothers me. There was something green in my dinner, I promise! Well, I assembled these sandwiches an hour before I actually made them. I wouldn’t suggest this normally - the tomatoes make the bread soggy - but I discovered to my chagrin that my loaf of bread was dry, so I figured “What the hey?” I wrapped them up and flattened them with a dictionary (I’m serious) because I couldn’t be bothered to use two skillets and cans and whatever the recipe says, and Lord knows I don’t own a panini machine. I bypassed yogurt in my spread simply because I didn’t have any - and frankly, you don’t need it. I’d suggest making an extra half-batch though (and maybe adding just a tad more basil). These were delicious. My family said “These are the best paninis everrr!” so you know they’re good. Oh. If you listen to your brain instead of your stomach and choose to use wheat bread instead of Asiago sourdough bread, you will reduce this 310-calorie splurge to about 215 calories. :] So yum.
